Ingredients:
- 1/4 cup oil
- 3 tomatoes, diced
- 1 tablespoon garlic paste
- 2 tablespoon grated ginger
- 1/3 cup water
- 1/2 teaspoon EACH: coriander powder, turmeric powder and pepper
- 1 1/2 teaspoon cumin powder
- 500gms shrimp, peeled and deveined*
- 2 tablespoons lemon juice
- 1/2 teaspoon garam masala
- 2 teaspoons chaat masala
Instructions:
- Heat oil in a large sauté pan over medium-high heat.
- Add diced tomatoes and cook until they break down into a thick paste, about 8-10 minutes.
- Stir in garlic paste, grated ginger, and cook for 1 minute until fragrant.
- Add coriander powder, turmeric powder, red pepper flakes, and cumin powder, and stir to combine.
- Pour in water to prevent burning and stir well.
- Allow the water to reduce for about 5 minutes until the mixture thickens.
- Add peeled and deveined shrimp to the pan and cook for 2-3 minutes, stirring to coat the shrimp with the tomato masala.
- Season with salt, fenugreek leaves, garam masala, and chaat masala, and stir to mix.
- Garnish with chopped coriander and serve warm with basmati rice or naan.
